Ingredients

  • 8 ounces lo mein noodles
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • 2 green onions chopped

Instructions

  1. Cook lo mein noodles according to package instructions; drain and set aside.
  2. In a large skillet, heat vegetable oil over medium-high heat.
  3. Add mixed vegetables and sauté for 3-4 minutes until tender.
  4. Stir in garlic and ginger; cook for another minute.
  5. Pour in soy sauce and sesame oil, mixing well.
  6. Add in the cooked noodles and toss everything together until heated through.
  7. Garnish with green onions before serving.
