A delicious and easy-to-make Spicy Salmon Sushi Bake that is perfect for gatherings and comforting meals.

Ingredients

  • 2 cups sushi rice
  • 2 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 pound salmon fillet
  • 3 tablespoons mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 avocado, sliced
  • 1 green onion, chopped
  • 1/4 cup nori, cut into strips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until the water runs clear. Cook the rice in water according to package instructions.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fold in the vinegar mixture and let it cool.
  4. While the rice is cooling, prepare the salmon. Season the fillet and place it in a baking dish. Bake for 15-20 minutes until cooked through.
  5. In a bowl, combine the mayonnaise and sriracha sauce to create the spicy mayo.
  6. Once the salmon is done, flake it using a fork. Mix in some of the spicy mayo according to taste.
  7. In a baking dish, layer sushi rice, followed by the salmon mixture and top with slices of avocado and green onions.
  8. Drizzle additional spicy mayo on top and sprinkle with nori.
  9. Bake for another 10-15 minutes until heated through.
  10. Let cool for a few minutes before serving.

Notes

  • You can adjust the spiciness of the dish by using more or less sriracha.
  • For added flavor, consider marinating the salmon before baking.
