- 2 cups sushi rice
- 2 cups water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 pound salmon fillet
- 3 tablespoons mayonnaise
- 2 tablespoons sriracha sauce
- 1 avocado, sliced
- 1 green onion, chopped
- 1/4 cup nori, cut into strips
- Preheat your oven to 350°F (175°C).
- Rinse the sushi rice under cold water until the water runs clear. Cook the rice in water according to package instructions.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fold in the vinegar mixture and let it cool.
- While the rice is cooling, prepare the salmon. Season the fillet and place it in a baking dish. Bake for 15-20 minutes until cooked through.
- In a bowl, combine the mayonnaise and sriracha sauce to create the spicy mayo.
- Once the salmon is done, flake it using a fork. Mix in some of the spicy mayo according to taste.
- In a baking dish, layer sushi rice, followed by the salmon mixture and top with slices of avocado and green onions.
- Drizzle additional spicy mayo on top and sprinkle with nori.
- Bake for another 10-15 minutes until heated through.
- Let cool for a few minutes before serving.
Notes
- You can adjust the spiciness of the dish by using more or less sriracha.
- For added flavor, consider marinating the salmon before baking.
