  • 1 pound fresh salmon, skinless
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 ripe avocado
  • 1 tablespoon Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the salmon, breadcrumbs, green onions, egg, lemon juice, garlic powder, salt, and black pepper until well combined.
  3. Form the mixture into small balls and place them on a baking sheet.
  4. Bake for 15-20 minutes or until golden brown.
  5. While the salmon balls are baking, prepare the creamy avocado sauce by mashing the avocado in a bowl and mixing in the Greek yogurt, lime juice, and salt until smooth.
  6. Once the salmon balls are done, serve them with the creamy avocado sauce.
