  • 1 pound salmon fillets
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 2 eggs
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh dill
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the salmon, breadcrumbs, green onions, eggs, mustard, dill, garlic powder, salt, and pepper.
  3. Form the mixture into small balls and place them on a baking sheet.
  4. Bake for 15-20 minutes until golden brown.
  5. While the salmon balls are baking, prepare the avocado sauce by blending ripe avocados with lemon juice, salt, and pepper.
  6. Serve the salmon balls with the creamy avocado sauce.

Notes

  • For a spicy kick, add some chopped jalapeños to the mixture.
  • These salmon balls can be made ahead of time and frozen.
