A delicious and easy Overnight Blueberry French Toast Casserole that’s perfect for breakfast or brunch.

Ingredients

  • 1 loaf challah bread, cubed
  • 2 cups blueberries, fresh or frozen
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 8 slices turkey bacon, cooked and chopped

Instructions

  1. In a large bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, and salt.
  2. Add the cubed challah bread and blueberries, mixing well to combine.
  3. Transfer the mixture to a greased baking dish and cover with plastic wrap.
  4. Refrigerate overnight.
  5. Preheat the oven to 350°F (175°C).
  6. Bake uncovered for 45-55 minutes or until golden brown and set.
  7. While baking, cook turkey bacon until crispy, then sprinkle over the top before serving.

Notes

  • For added sweetness, you can drizzle extra maple syrup on top before serving.
