- 500g white fish, such as cod or haddock
- 250g smoked fish, such as haddock or salmon
- 500ml milk
- 50g butter
- 50g plain flour
- 200g frozen peas
- 1 onion, finely chopped
- 1 lemon, zest and juice
- 1 tablespoon fresh dill, chopped
- 650g mashed potatoes
- Preheat your oven to 200°C (400°F).
- In a saucepan, heat the milk and add the white fish, poaching gently until cooked.
- Remove the fish and set aside, reserving the milk.
- In the same pan, melt the butter and add the onion, cooking until softened.
- Stir in the flour and cook for a minute before gradually whisking in the reserved milk.
- Bring to a simmer until thickened, then stir in the peas, smoked fish, zest, juice, and dill.
- Flake the cooked fish back in and pour the mixture into a pie dish.
- Top with the mashed potatoes and smooth over.
- Bake for 25-30 minutes until golden and bubbling.
Notes
- For extra flavor, add a splash of white wine to the filling.
- Top with grated cheese before baking for a cheesy crust.
