Delicious and hearty muffins packed with turkey bacon, eggs, and crispy hash browns.

Ingredients

  • 2 cups hash browns
  • 6 slices turkey bacon
  • 4 large eggs
  • 1 cup shredded cheese
  • 1/2 cup green onions, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then chop it into small pieces.
  3. In a bowl, mix the hash browns with salt, pepper, and half of the cheese. Press mixture into greased muffin tins.
  4. In another bowl, whisk the eggs and stir in the bacon, green onions, and remaining cheese.
  5. Pour the egg mixture over the hash brown crusts.
  6. Bake for 20-25 minutes or until egg is set and tops are golden.
  7. Let cool slightly before removing from muffin tins.
