These High-Protein Pancake Sausage Mini Muffins are a delicious and nutritious treat that combines the classic flavors of pancakes and sausage in a bite-sized form.

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon maple syrup
  • 1 cup cooked and crumbled sausage
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large mixing bowl, combine the whole wheat flour, protein powder, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the cooked and crumbled sausage.
  6. Fill the mini muffin tins about 3/4 full with the batter.
  7. Bake for 15-18 minutes or until golden brown.
