Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 packet taco seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 4 strips turkey bacon, cooked and crumbled
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and garlic, cooking until soft.
  3. Add ground turkey, cooking until browned.
  4. Pour chicken broth into the pot.
  5. Stir in black beans, corn, and taco seasoning.
  6. Simmer for 20 minutes.
  7. Stir in heavy cream and shredded cheese.
  8. Cook until cheese is melted.
  9. Finish with lime juice, salt, and pepper.

Notes

  • This soup can be customized with additional vegetables.
  • For a spicier kick, add jalapeños.
