A creamy and delicious potato soup that perfectly combines the flavors of cheddar cheese, garlic, and herbs, enhanced with crispy turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté the onions and garlic in the bacon drippings until softened.
  3. Add the diced potatoes and chicken broth. Bring to a boil and then reduce heat to simmer.
  4. Cook until potatoes are tender, about 15-20 minutes.
  5. Puree the soup with an immersion blender for a smoother texture, or leave as is for a chunkier soup.
  6. Stir in the heavy cream, cheddar cheese, thyme, and parsley. Season with salt and pepper.
  7. Serve hot, topped with crispy turkey bacon.

Notes

  • For extra flavor, you can add a splash of Worcestershire sauce.
  • This soup can be made ahead and reheated for convenience.
