  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/3 cup Greek yogurt
  • 1/4 cup honey or agave syrup
  • 1/2 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and vanilla extract. Press the mixture into the bottom of the prepared dish.
  3. In another bowl, beat the cream cheese, Greek yogurt, and honey until smooth. Pour over the crust.
  4. Drop fresh raspberries on top and gently swirl them into the cheesecake layer.
  5. Bake for 25-30 minutes, then cool completely before cutting into bars.
