  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 8 ounces cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/2 cup fresh raspberries
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, melted coconut oil, and honey until well mixed.
  3. Press the mixture into the bottom of a greased baking pan.
  4. In another bowl, mix softened cream cheese, Greek yogurt, eggs, vanilla extract, and salt until smooth.
  5. Gently fold in fresh raspberries.
  6. Pour the cream cheese mixture over the crust.
  7. Bake for 25-30 minutes or until set.
  8. Allow to cool before slicing into bars.
