These Healthy Carrot Cake Oatmeal Cookies are a perfect guilt-free treat that combines the flavors of traditional carrot cake with the wholesome goodness of oatmeal.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup grated carrots
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, flour, grated carrots, honey or maple syrup, applesauce, cinnamon, baking powder, and salt.
  3. If desired, stir in raisins or walnuts.
  4. Drop spoonfuls of dough onto a lined baking sheet.
  5. Bake for 10-12 minutes or until golden brown.
  6. Let cool before serving.
