These Healthy Carrot Cake Oatmeal Cookies are perfect for satisfying your sweet tooth while keeping things nutritious and guilt-free.

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the oats, grated carrots, applesauce, honey or maple syrup, cinnamon, baking soda, and salt.
  3. Fold in the walnuts and raisins if using.
  4. Drop spoonfuls of the mixture onto a lined baking sheet.
  5. Bake for 15-20 minutes or until golden brown.
  6. Allow to cool before serving.

Notes

  • For a vegan option, use maple syrup.
  • Store in an airtight container for up to 5 days.
