Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 lime, juiced
  • 4 tostada shells
  • 2 avocados, mashed
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, minced
  • salt to taste

Instructions

  1. In a bowl, combine shrimp, olive oil, chili powder, cumin, and lime juice. Let marinate for 15 minutes.
  2. Grill the shrimp on medium heat for 2-3 minutes per side until cooked through.
  3. While shrimp are grilling, prepare the guacamole by mixing mashed avocados, diced tomatoes, onion, cilantro, jalapeño, and salt.
  4. Assemble tostadas by spreading guacamole on each tostada shell and topping with grilled shrimp.
  5. Serve with additional pico de gallo on the side.

Notes

  • For extra flavor, marinate shrimp longer if time allows.
  • Serve with lime wedges for added zest.
