1 pound orzo pasta
2 cups cooked chicken, shredded
1 cup turkey bacon, chopped
1 onion, sliced
2 cups beef broth
1 cup shredded mozzarella cheese
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt to taste
Black pepper to taste
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat and sauté the sliced onions until translucent.
Add the chopped turkey bacon and cook until crispy.
Stir in the cooked chicken, garlic powder, onion powder, salt, and pepper.
In a large pot, cook the orzo according to package instructions until al dente, then drain and combine with the chicken mixture.
Add the beef broth and half of the mozzarella cheese, stirring to combine.
Transfer the mixture to a greased casserole dish and top with the remaining mozzarella cheese.
Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden brown.
Notes
This casserole can be made ahead of time and baked just before serving.
