1 pound chicken thighs
1 cup basmati rice
2 cups chicken broth
1 cup tzatziki sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried dill
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a baking dish, arrange the chicken thighs and season with garlic powder, onion powder, dill, salt, and pepper.
Pour the rice and broth around the chicken.
Cover with foil and bake for 25 minutes.
Remove the foil, pour the tzatziki sauce over the chicken, and bake for another 10-15 minutes, or until the chicken is cooked through and the rice is fluffy.
Notes
For added flavor, marinate chicken in tzatziki sauce for a few hours before baking.
Feel free to use brown rice, but adjust cooking time accordingly.
