  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (14 ounces) diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the white beans, diced tomatoes, vegetable broth, basil, oregano, salt, and black pepper.
  5. Bring to a simmer and cook for 20 minutes.
  6. Stir in the heavy cream and spinach, cooking until the spinach is wilted.
  7. Serve warm.

Notes

  • For a vegan version, substitute the heavy cream with coconut milk.
  • You can add other vegetables like carrots or bell peppers for extra flavor.
