  • 4 slices turkey bacon
  • 1 cup corn kernels
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook the rotini pasta according to package instructions until al dente.
  2. While the pasta cooks, cook the turkey bacon in a skillet until crispy. Remove and chop into pieces.
  3. In a large mixing bowl, combine the cooked pasta, corn, cherry tomatoes, red onion, turkey bacon, mayonnaise, sour cream, lime juice, chili powder, and cilantro. Mix until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
