Deliciously tart and sweet, these cranberry crumble bars are an easy treat to make for any occasion.

Ingredients

  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, oats, baking powder, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the vanilla extract and mix well.
  5. Gradually add the dry ingredients to the wet mixture until combined.
  6. Spread half of the mixture in the bottom of a greased baking dish.
  7. Layer the cranberries over the crumble base.
  8. Add the remaining crumble mixture on top of the cranberries.
  9. Bake for 30-35 minutes or until golden brown.
  10. Let cool before slicing into bars.

Notes

  • Serve with a dollop of whipped cream for added indulgence.
  • Use frozen cranberries if fresh ones are not available, just increase sugar slightly.
