  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/4 cup cilantro, chopped
  • 2 limes, juiced
  • 8 corn tortillas
  • 1 cup cabbage, shredded
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Instructions

  1. In a bowl, combine shrimp, olive oil, garlic, cumin, chili powder, cilantro, and lime juice. Marinate for 15 minutes.
  2. Heat a skillet over medium heat and add the marinated shrimp. Cook until pink and cooked through, about 3-4 minutes.
  3. In another bowl, mix cabbage, mayonnaise, apple cider vinegar, sugar, and salt to make the creamy slaw.
  4. Warm the corn tortillas in a separate pan.
  5. Assemble the tacos by placing shrimp and creamy slaw in the tortillas.
  6. Serve with extra lime wedges and cilantro if desired.
