  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon instant espresso powder
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the bananas and mix in the sugar and melted butter.
  3. Add the eggs and vanilla, and mix until well combined.
  4. In a separate bowl, combine the flour, cocoa powder, baking soda, salt, and espresso powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared pan and bake for 60-70 minutes or until a toothpick comes out clean.
  8. Let it cool before slicing.

Notes

  • For a richer flavor, you can substitute dark chocolate chips.
  • Make sure the bananas are very ripe for optimal sweetness.
