2 pounds boneless, skinless chicken thighs
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon garlic, minced
1 tablespoon ginger, grated
1 tablespoon vegetable oil
1 cup mixed vegetables (bell peppers, zucchini, onions)
1 tablespoon green onions, chopped
Instructions
Preheat the Blackstone griddle to medium-high heat.
In a bowl, combine chicken thighs, soy sauce, sesame oil, garlic, and ginger. Let marinate for 15 minutes.
Add vegetable oil to the griddle and place marinated chicken on it.
Cook chicken for about 6-7 minutes on each side or until fully cooked.
Remove chicken and chop it into bite-sized pieces.
Add mixed vegetables to the griddle and sauté until tender.
Combine chicken and vegetables, then garnish with chopped green onions. Serve hot.
