  • 1 can (13.5 oz) coconut milk
  • 2 lemons (zested and juiced)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)

  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, place the cod fillets and season with salt and pepper.
  3. In a bowl, mix together coconut milk, lemon juice, lemon zest, olive oil, and minced garlic.
  4. Pour the coconut mixture over the cod.
