  • 1 cup diced apples
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. Combine the flour, baking powder, baking soda, and salt in a separate bowl and gradually add to the creamed mixture.
  5. Stir in the diced apples, oats, cinnamon, nutmeg, and nuts if using.
  6. Spoon the batter into the prepared cupcake liners, filling them about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
