  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1/2 cup cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the eggs, apple cider, and vanilla extract to the butter mixture, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized amounts of batter onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool completely before frosting.
  9. For the filling, beat together the cream cheese and powdered sugar until smooth.
  10. Scoop the filling onto the flat side of one cookie and sandwich it with another cookie.
  11. Repeat until all cookies have been filled.
